                   Extravaganza Pastry will feature some of our recipes and special holiday recipe. A Professional Pastry Production is different  from home baking. We have put a lot of afford to modify the recipes to the home kitchen. Every recipe will be followed with tips and advices to promise the best results on the first time you will try it.

CHOCOLATE EXPLOSION

One of our most popular cookies. Take a peek through your oven glass and watch them explode ... No cleaning after will be necessary.

 For 50 Cookies

3                  Whole Eggs
1/2               Cup granulated sugar
12.5 oz.        Dark Chocolate 65% or higher
1.75 oz.        Margarine or Butter 
3 Tbsp.         Cream or Non dairy Creamer  
1-3/4 Cups    Sifted all purpose Flour  
1 Tsp.           Baking Powder
To Cover:   
2 cups          Powder sugar

1. In a mixer, Whip eggs and sugar for 5 minutes on high speed.
2. Melt the Margarine and the chocolate. Fold in the egg mixture, Add the Cream and fold.
3. Fold in the flour and baking powder.
4. Line a bowl with plastic wrap and move to the freezer for 2 hours.
5. Preheat oven to 355F / 190C
6. Roll to small ball ,about 1" big
7. Roll the chocolate balls in the powder sugar.
8. Lay on a sheet pan with baking sheet or silpat. Keep enough space between the cookies , about 2"
9. Bake for EXACTLY 8 Min. !! The cookies will crack and stay soft it is O.K. Coll them down , Keep in a
    tight container for a week.

     BE CREATIVE
 1.Change the 3 Tbsp. of cream with Coffee Liqueur, Irish Cream, Orange Liqueur, Amaretto or any other flavor.
 2. Change 1 cup of flour with Almond or Hazelnut Flour
 3. Add 1 Tsp. of Chili Pepper .. to spice it up

      Tip
For an even size balls: Roll 1/3 of the mixture to about an inch thick " Snake" cut to even pieces with a knife

    For 24 Hamantachen
   
    2 cups all-purpose flour
    2 teaspoons baking powder
    1/8 teaspoon salt
    1/2 cup margarine
    1 cup sugar 
    1 large egg 
    1 tablespoon coffee rich or Orange Juice
    1/3 cup of filling such as Poppy seeds, Apple, Apricot, Chocolate, Raspberry marmalade, Dates, Nuts
                                             & Cinnamon, Guava Paste, Prunes

    1.  Mix flour, Baking Powder and salt
     2. With a mixer, beat margarine, sugar and egg, add the coffee rich ( or O.J)
     3. Add flour mixture , mix until a smooth dough is formed., wrap and cool for three hours.
     4. Roll out half of the dough and cut 3" rounds with a cookie cuter
     5.  Put 1 teaspoon filling in center of each round and fold up edges to form triangular cookies resembling a 
          tricornered hat, pinching corners together and leaving filling exposed.
       -Repit the same with the othe half a dough
     6. Transfer to a baking sheet , bake 375 F for 20 minutes or until golden brown.
     7.  Let cool, dust with powder sugar
